Would this cable know how to fetch a 1080p signal?

As far as my personal experience go I've never come across a component cable that couldn't carry a 1080p signal.
However, if you can progress with HDMI, some say-so they cannot notice the difference, but I manifestly can. All component cable will support 1080p, BUT many consumer devices closing date output to component to 1080i.
That said, the 8800GT has dual DVI outputs, so why use component? You don't say-so what you are connecting to (e.g. HDTV, projector, LCD Monitor), but you should be able to use a DVI-D cable (See the association for details on recognizing different DVI connectors. The same company have the cables too, but you should enjoy one already if you have an LCD monitor ... or can buy locally).
