Does anyone know if apple are planning on releasing more applications for the ipod touch? They released some in january which I bought (eg communication, notes, map, stocks, weather) but I was wondering if they would do this again and bring out games etc.

Also, are nearby any specific web apps that you'd recommend for the ipod touch?

i would say in recent times jailbrake ur touch... and then TONS of applications to install...
from games to dictionaries, radio and etc....

yes at macworld 2008 steve job announced that in june apple would release an app call app store, which allows you to purchase apps for free right on your ipod touch or iphone Sensible not to Jailbreak your iPod Touch. It can budge seriously wrong at times.
And yes, Steve Jobs recently announced that an Application will come out for the iPhone and iPod Touch that allows 3rd gala Apps to be installed to your iPod Touch. This isn't free, unlike the iPhone, but I believe it's the best software upgrade as yet, and if you enjoy a version up to that time 1.1.4, I wouldn't get it presently plans have be announced for 1.1.5.
I don't really use Web Apps, so I can't recommend anything for you there, but try the Apple website for some :)
